For such a simple smoke, I think mine turnout like ass. I’ve watched several videos and I still don’t care for my finished product.
- I don’t go crazy on my rubs; I use standard butt rubs
-I don’t inject..I prefer true taste of the meat
- I spritz every hour or so with apple juice
- I usually use pecan/hickory pellets
- I smoke to 160’ish or until the bark is set and then I’ll wrap to 200 and let cool.
- The butt always come out tender, but just seems I am missing something.
What am I missing? I have a luncheon coming up and I’ll be smoking 3ea butts.
