Yes, I know it’s last minute but I don’t care, I’m doing it. My mother in law gave me a prime brisket (long story) that she couldn’t use. I’ve smoked pork, beef ribs, chicken and fish so I’m pretty good at those but I’ve never smoked a brisket. Problem is, it’s too big for my smoker. So, should I cut it in equal halves or just trim enough off the end to get it in (TWSS)? I’m planning on doing mostly salt & pepper rub with bison and beef rub mixed in. All advice is welcome, especially the smart-ass type. Happy Independence Day and Boomer.
